Blueberry Lemon Cookies
A Healthier way to make cookies!

ingredients
- 1/2 cups Dates puree
- 1/2 cup unsweetened apple sauce or non-fat Greek yogurt
- 1 egg
- 1/2 Tsp of Baking Soda
- 1/2 Tbsp of Baking Powder
- 1 Tbsp of Vanilla Extract
- 1/4 cup Coconut flour
- 3/4 cup of Whole Wheat or Kamut or any Grain flour of your choice
- 1/8 cup Ground Flax seeds
- 1 cup Fresh or Frozen Blueberry
- Zest of 1 Lemon

instructions
Preheat oven to 350 degrees F.
In a bowl, blend Dates puree with apple and the egg until all incorporated. Add backing soda, baking powder and vanilla. Blend again.
Add flour and flax seed, blend together. Add lemon zest and blueberry and finish blending with a wooden spoon.
*If you use frozen blueberry it will color the dough blue 😉
Cover a baking sheet with parcheming paper. If you put nothing it will stick because there’s no fat in the cookies.
Make ~2 inch ball with an ice cream spoon and place on paper.
Bake for 13-15 min depending of the size of your blueberry. Allow your cookies to cool on a rack before digging in.
